Main Ingredient:
Raw mangoes — 1 kg (chopped)
Spices:
Mustard oil — 250ml
Fenugreek seeds — 2 tbsp (lightly roasted)
Mustard seeds — 3 tbsp (split)
Fennel seeds — 2 tbsp
Turmeric — 2 tbsp
Red chilli powder — 4 tbsp
Salt — to taste
Asafoetida — 1/2 tsp
Method:
  1. Wash and dry mangoes completely (no water).
  2. Cut into pieces with seed.
  3. Mix all spices with mango pieces.
  4. Heat mustard oil till smoking, cool.
  5. Pour cooled oil over mangoes.
  6. Sun-dry 5-7 days, stirring daily.
  7. Store in glass jar.
