Main Ingredient:
Raw mangoes — 1 kg (chopped)
Spices:
Mustard oil — 250ml
Fenugreek seeds — 2 tbsp (lightly roasted)
Mustard seeds — 3 tbsp (split)
Fennel seeds — 2 tbsp
Turmeric — 2 tbsp
Red chilli powder — 4 tbsp
Salt — to taste
Asafoetida — 1/2 tsp
Method:
- Wash and dry mangoes completely (no water).
- Cut into pieces with seed.
- Mix all spices with mango pieces.
- Heat mustard oil till smoking, cool.
- Pour cooled oil over mangoes.
- Sun-dry 5-7 days, stirring daily.
- Store in glass jar.
